The longer this dressing sits, the better. So, I suggest making it in the morning and let it sit in the refrigerator for the remaining of the day.
It may seem like a lot of onions, but honestly, the onions are what make this salad so special. They get slightly pickled in the vinegar, so they add a nice crunchy acidic pop. The fresh parsley provides some herbaceous notes, which cuts the richness of the oil.
If you're looking to make this salad an entree, I suggest adding gyro meat from your local Greek restaurant and crumbled feta. You could also add blue cheese, diced apple, and grilled steak.

- 1/4 cup olive oil
- 2 tbsp sugar
- 2 tbsp parsly chopped
- 2 tbsp red wine vinegar
- salt and pepper to taste
Combine all ingredients. Put the dressing in the refrigerator and let sit.
Take a head of iceburg lettuce and chop. Pour as much dressing as you prefer on the lettuce.
