Pumpkin Chocolate Chip Cookies

Tis the season for everything pumpkin!  Here’s a simple yet delicious recipe for pumpkin chocolate chip cookies.  What I love about these cookies: They are fluffy, not overly sweet, have a nice background of spice, and are a one bowl bake.  Make these for your kids, co-workers, or yourself.  Beware though, once they come out of the oven, it’s hard to not devour them ASAP.

Recipe: Pumpkin Chocolate Chip Cookies

Prep Time: 5 minutes      Cook Time: 10-12 minutes    Serves: 24-30 small cookies

Ingredients:

1 cup pumpkin puree
1 cup oil
3/4 cup sugar
1 egg
2 tablespoons milk
1 teaspoon vanilla
1 1/2 teaspoon cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/8 teaspoon ground cloves
1 teaspoon baking soda
2 teaspoons baking powder
1/2 teaspoon salt
2 cups flour
1 1/2 cup semi sweet chocolate chips

Directions:

Preheat oven to 350 degrees.

Using a whisk, combine all of the wet ingredients (including sugar).  Add the dry ingredients to the wet mixture and mix with a spoon.

Spoon dough on a baking sheet that has been oiled or covered with parchment paper.  I use a small ice cream scoop so each cookie is roughly the same size.

Bake for 10-12 minutes or until done.
