Homemade pasta is my absolute favorite food. I love it with ragu, meatballs, or simply with oil and parmesan cheese. A few years ago I received a pasta maker attachment as a gift and questioned how often I would actually use it. To my surprise, I use it frequently. In fact, this past weekend, I used it twice. This recipe is relatively easy to make and full of flavor.
Recipe: Homemade Pasta
Prep Time: 15 minutes Rest Time: 1 hour Cooking Time: 2-3 minutes
3.5 cups flour (all purpose or 00 flour work just fine)
4 eggs and 1 yolk
2 tablespoons oil
1 teaspoon salt
2 tablespoons water, more if needed.
In a large bowl, combine all ingredients. Once mixed thoroughly, knead for roughly 5 minutes. If the dough seems too wet, add a bit more flour. If it’s too dry and not coming together, add an additional tablespoon of water.
Form into a ball, wrap in plastic wrap, and refrigerate for at least an hour.
Once the dough has rested, use as directed by the pasta maker attachment. I usually boil my pasta for 2-3 minutes.
