The Best Shake and Bake Chicken

The best shake and bake chicken is inspired partially by my mom. I grew up eating my mom’s shake and bake chicken.  To be honest, it was a large, overcooked chicken breast covered in boxed seasoned bread crumbs.  This version of shake and bake will rock your world.  The chicken is tender, moist, and full of flavor.  The panko stays crispy and doesn’t fall off the chicken.  This dish was also inspired by Smitten Kitchen’s chicken milanese, which is a recipe I would highly suggest making.

Recipe: The Best Shake and Bake Chicken

Prep Time: 15 minutes      Soak Time: 3-24 hours     Cook Time: 10 minutes    Serves: 3 or 4

Ingredients:
2 tablespoons oil
1 tablespoons butter
2 boneless, skin less chicken breasts (either butterflied or pounded)
1 cup buttermilk
2 cups panko
1 tablespoon garlic powder
1 teaspoon salt
Pepper

Optional Salad:
3 cups arugula
2 tablespoons good olive oil
1/2 lemon
1/3 cup cherry tomatoes
Salt, pinch
Pepper

Directions:

First, take your 2 pounded or butterflied chicken breasts and cut them in half, so you have 4 pieces.  Place them in a medium sized bowl and cover with buttermilk.  Then, place bowl in the refrigerator and soak for at least 3 hours or up to 24 hours.  I do this before I leave for work or the night before I want to eat this dinner.

In another medium sized bowl, combine panko, garlic powder, salt and pepper.

At least 1 hour before eating, bread the chicken by following these directions:

Next, take one chicken piece at a time, let some of the buttermilk drain off, and dip it into the panko mixture.  Take your fork and push the piece down into the panko, so the breadcrumbs get into every part of the chicken.  Make sure the chicken breast is thoroughly covered in panko.  Repeat with the rest of the pieces.

Refrigerate the panko covered chicken for about an hour.  This helps the panko covering stick to the chicken.

In a large saute pan, heat the butter and oil to medium high heat.

Add the breaded chicken breasts.  Cook for 3-4 minutes on each side.

In the mean time, combine all of the salad ingredients.

Finally, place the cooked chicken on a plate and top with a large scoop of the salad.
