I think everyone needs to make buttermilk biscuits. They’re flakey, tangy, buttery, and quite simply delicious. I first fell in love with biscuits when I ate at Pine State Biscuits. In my attempt to recreate their biscuit, here’s is my recipe.
Prep Time: 15 mins Cooking Time: 15 mins Serves: 6 large or 12 small biscuits
2 cups flour
4 1/2 teaspoons baking powder
1/4 teaspoon baking soda
3/4 teaspoon salt
1 stick plus 1 tablespoons butter, divided
1 cup buttermilk
Preheat oven to 450 degrees. Grease a baking sheet.
Cut up one stick of butter in 1/2 inch cubes. Put it back in the fridge while you get the rest of the ingredients ready.
In a bowl, combine the flour, baking powder, baking soda, and salt. Get the butter out of the refrigerator and place in bowl with dry ingredients. Either using a pastry cutter or your fingers, mix the dry ingredients with the butter. You want the mixture to look like crumbs.
Make a well in the center of the mixture and pour in the buttermilk. Combine until the dough comes together. If it’s too dry, add a little bit more buttermilk. If it’s too sticky, add more flour.
Pour dough onto floured surface. Sprinkle some flour on top. Kneed the dough until it comes together. Don’t over kneed or else the biscuits will be tough. It took me about 1 minute for the dough to come together. Keep sprinkling flour if the dough sticks to the countertop. Roll out so it is roughly 1/4 inch thick. Fold the dough in thirds. Almost like you roll up a burrito. Roll it out again so it is roughly 18-22 inches long and 3 inches wide. Cut off the edges so they look nice. Cut 8 pieces. Fold each into thirds, like a burrito.
Bake for about 15-20 minutes or until golden brown. When the biscuits come out of the oven, brush on the tablespoon of melted butter and a sprinkling of salt. They are the best right out of the oven. I like to cut them in half, spread more butter on and top it with honey, jam, fried egg, or sausage. Actually, I think you could put a shoe on these biscuits and they would still taste good.
Suggestions: These biscuits are an excellent side dish to buttermilk fried chicken.
