Marinated Asian Chicken Recipe

My marinated Asian chicken recipe is a simple yet flavorful dish.  The savoriness of the fish sauce combined with the citrus notes of lime juice creates a chicken that is truly addicting.  While this chicken can easily be eaten by itself, I love to place it on fresh bread and top it with pickled vegetables to recreate a banh mi style sandwich.  Either way you eat it, you won’t be disappointed.

Marinated Asian Chicken Recipe

Banh Mi with Asian Marinated Chicken

Prep/Marinating Time: At least 1 hour and not more than 24        Cook Time: 10-15 minutes   Serves: 2

Ingredients:

2 boneless skin less chicken breast
1/4 cup lime juice
1 tablespoon fish sauce
2 teaspoons granulated sugar
1 garlic clove, minced
1 teaspoon ginger, minced or grated
1/4 cup canola or vegetable oil

Directions:

First, I suggest pounding the chicken breasts.  So it makes for more tender meat and lets the sauce thoroughly marinate the chicken.

Next, place all of the ingredients in a gallon sized bag, mix thoroughly, and put in the refrigerator until ready to grill.

Finally, grill for about 5 minutes per side.  Let the chicken rest for 5 minutes and then slice thin.

This chicken is great served in lettuce wraps, with sticky rice, or as the base of a banh mi sandwich.

Suggestions:

For dessert, I suggest making my homemade Oreos or splurging with my salted caramel budino.
