Recipe: Pasta with Bolognese

Ian recently made me one of my favorite dishes: pasta with bolognese. I about died and went to heaven eating his version of bolognese.  It was meaty and had plenty of depth due to the use of wine, tomato paste, and pancetta.  If you are a meat sauce fan, make this recipe.  It won’t disappoint.  I promise.

Prep/Cook Time: 45 minutes          Serves: 6 people


2 tablespoons butter
1 onion, diced
2 cloves garlic, minced
¼ pound ground pork
⅔ pound ground beef
1 cup chicken stock
½ white white
2 tablespoons tomato paste
¼ pound diced pancetta
¼ teaspoon dried oregano
½ teaspoon salt
¼ teaspoon chili flake
Parsley, minced
¼ cup half and half


In a large sauce pan, heat the butter.  Add the pancetta and cook until crisp.  Place the cooked pancetta on a plate.  Add the onions, salt, and pepper and cook until translucent or about 5 minutes.  Add the minced garlic and continue cooking for about 2 minutes. Next, add the ground pork and ground beef.  Sauté the ground meat until thoroughly cooked or no longer pink.  Once the meat has cooked, add the rest of the ingredients except the half and half.  Let the sauce simmer for about 30 minutes.  If it gets too thick, add some additional chicken stock or pasta water.

Right before serving, add the half and half and make sure it’s heated through.
