Oreo Cookies Recipe

I recently made the Homemade Oreas from cookbook flour by Joanne Chang.  While I loved the cookies, I made a few changes of my own, such as assembly method.  These cookies taste like a fancy Oreo with a deep chocolate flavored cookie and creamy vanilla frosting.  Even adults will devour them.  I promise.

Ingredients for Cookies

1 cup butter, melted and slightly cooled

3/4 cup granulated sugar

1 teaspoon vanilla extract

1 cup semisweet chocolate chips, melted and slightly cooled

1 egg

1 1/2 cups flour

3/4 cup Dutch-processes cocoa powder

1 teaspoon salt

1/2 teaspoon baking soda

Ingredients for Cream Filling

1/2 cup butter, softened

1 2/3 cups powdered sugar

1 teaspoon vanilla extract

1 tablespoon milk

Salt, pinch

Directions for Cookies

Preheat oven to 350 degrees. In a medium sized bowl, combine melted butter, granulated sugar, and vanilla extract. Mix until fully incorporated. Add the melted chocolate and egg and continue to mix. Next, add the flour, cocoa powder, salt, and baking powder. The dough will start to come together and thicken up.

Place 1 inch thick dough balls on greased baking sheet. Place baking sheet in refrigerate for at least 30 minutes. Bake cookies for 10 minutes. Let cookies cool completely before frosting. Place frosting on one cookie and top with another cookie, so it looks like an Oreo.

Directions for Frosting

In a medium sized bowl combine all ingredients. Using an electric mixer, combine until all ingredients are incorporated.

Notes

Using Dutch-processed cocoa powder gives the cookies a darker chocolate look and taste. If you try and frost the cookies before they are completely cool, the frosting will melt.
