I’m pretty sure I could eat caesar salad at least once a week. I love to add grilled chicken and homemade croutons to make it a full meal. This is a great summer meal or something to throw together after a long day at work.
Recipe: Caesar Salad
Prep Time: 5 minutes Serves: 4 to 6 servings
2 tablespoons red wine vinegar
1 tablespoon dijon mustard
1 tablespoon lemon juice
1/3 cup parmesan cheese, I use Kraft
1 small garlic clove, minced
1 egg yolk, if you prefer not using raw egg substitute it with 2 tablespoons of mayonnaise
3 anchovy fillets or 1 tablespoon anchovy paste
1/3 cup olive oil
Combine all of the salad ingredients in a bowl. Refrigerate until ready to use.
