Growing up I was never a big pancake fan. They often were too sweet or lacked flavor. That is until I tried the buttermilk pancakes at Roots Cafe. They are slightly sweet, a bit tangy, light, and airy. Truly delicious. Here is my take on their drool worthy pancakes.
Recipe: Buttermilk Pancakes
Prep Time: 5 minutes Cook Time: 15 minutes Serves: 10-12 pancakes
2 cups flour
1/4 cup sugar
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 cup butter, melted and cooled
2 cups buttermilk
In a medium sized bowl, combine flour, sugar, baking powder, baking soda, and salt. Add the cooled and melted butter. Whisk in the eggs and buttermilk. Do not over mix! The mixture will be lumpy when you’re ready to cook.
Heat a large saute pan to medium and some butter. Once the butter has melted, spoon about 1/3 cup batter onto the hot pan. Cook for about 2 minutes on each side.
Top pancakes with additional butter and syrup.
