This is one of my go-to dressings. I especially enjoy it during the summer months because of the availability of fresh corn. However, canned corn tastes just as good. Even if you claim to hate cilantro, try it out! There’s a good chance you’ll be as happy as a clam while eating it.
2 tablespoons rice wine vinegar
1 tablespoon honey
1/4 cup lime juice
1/4 teaspoon cumin
1/4 cup cilantro, chopped
1/2 cup olive oil, I prefer light olive oil for this dressing
1/4 teaspoon salt
Combine all of the ingredients. Refrigerate until ready to use.
In a bowl, combine mixed greens, diced red bell pepper, corn (fresh or canned), diced avocado, and desired amount of dressing. For some extra texture, you can add crushed tortilla chips.
