Here’s a great recipe for muffins that are delicious for breakfast, a snack, or dessert. They’re light, not too sweet, and go perfectly with a hot cup of coffee or tea.
Recipe: Coffee Cake Muffins
Prep Time: 5 minutes Cooking Time: 20-25 minutes Serves: 7 muffins
Ingredients For Batter
1/2 cup granulated sugar
6 tablespoons butter, softened
1/2 cup + 1 tablespoon sour cream
1 1/4 cups flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
Ingredients for Streusel
1/8 cup brown sugar
1/4 cup flour
1/2 teaspoon cinnamon
2 tablespoons butter, cold and diced
Preheat oven to 350 degrees.
Cream the butter and sugar for about 2-3 minutes. Add the eggs and continue mixing. Once the eggs are fully incorporated, add the sour cream and mix for an additional minute. Using a spoon or a spatula, incorporate the dry ingredients. Scoop into a muffin tin. Top each muffin with a spoonful of streusel.
To make the streusel, combine all ingredients in a bowl. I use my fingers to break up the butter.
Bake muffins for 20-25 minutes.
